Lemon Thyme Power Greens

This salad may look simple, but don’t let its appearance fool you — the flavor is out of this world. Made with just a few everyday ingredients, it’s the perfect balance of crisp, juicy, and tangy.

Whether you’re serving it at a family lunch, summer BBQ, or just want something light and refreshing, this salad always delivers.

2–3 fresh tomatoes, chopped, 1–2 cucumbers, sliced into thin rounds,1 small white or red onion, thinly sliced, 3 tbsp olive oil, 2 tbsp apple cider vinegar or fresh lemon juice, Salt and black pepper to taste, (Optional) Fresh parsley or dill for garnish

 Instructions:
In a large bowl, combine the chopped tomatoes, sliced cucumbers, and onions. In a separate small bowl, whisk together olive oil, vinegar (or lemon juice), salt, and pepper.
