  • 8 medium fresh beets
  • 1 cup apple cider vinegar
  • 1/3 cup honey or maple syrup
  • 1 tsp whole cloves
  • 1 tsp whole allspice
  • 1/4 tsp salt

Directions:

  1. Scrub beets, trim tops, boil until tender (~25-30 min), peel and slice.
  2. In a saucepan, combine vinegar, honey/maple syrup, cloves, allspice, and salt. Boil for 5 min.
  3. Pour over sliced beets. Cool, then refrigerate 4 hours or overnight.
