Instructions
1. Preheat the Oven
Set your oven to 350°F (175°C).
2. Prepare Your Muffin Pan
Take out a 10-cup muffin tin and coat it generously with cooking spray or softened butter. This step is more important than it may seem. Because the meat mixture contains fats that will render during baking, greasing the pan helps prevent sticking and makes removal much easier.
3. Mix the Meatloaf Ingredients
In a large bowl—large enough to use your hands comfortably—combine the following: ground beef, chopped onion, chopped bell pepper, Worcestershire sauce, fresh parsley, Dijon mustard, ¼ cup of BBQ sauce, bread crumbs, Italian seasoning, garlic powder, the egg, and a sprinkle of salt and pepper.
Each ingredient serves a purpose:
- Onion and bell pepper add moisture and flavor.
- Worcestershire sauce brings depth and umami.
- Parsley brightens the overall taste.
- Dijon mustard adds subtle sharpness that balances richness.
- BBQ sauce adds moisture and a hint of sweetness.
- Bread crumbs bind the mixture and keep it tender.
- Italian seasoning and garlic powder provide layered flavor.
- The egg holds everything together.
- Salt and pepper enhance the natural flavors.
4. Blend the Mixture Thoroughly
5. Fill the Muffin Tin
6. Make the Glaze
In a small bowl, combine BBQ sauce, ketchup, and honey.
7. Add the Glaze
8. Bake
Place the muffin tin into your preheated oven and bake for about 25 minutes, or until the internal temperature reaches 160°F (71°C).
